If you need a quick, whole soup for a main course or side dish, try this easy Spinach Rice recipe. You can usually find cooked brown rice in the freezer section of your local supermarket. This can be made either omnivore or vegetarian/vegan-friendly. See the note at the end of the recipe for the specifics.

Super-Fast Spinach Rice Soup

Try this whole food soup for a main course with cheese toasts, or as a side dish.

  • 2 Tablespoons extra virgin olive oil
  • 3 cloves garlic (finely chopped)
  • 8- ounce package of fresh spinach
  • 1- quart container of broth (vegetable or chicken)
  • 1 cup cooked brown rice (or more for thicker soup)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon Penzey’s Foxpoint seasoning OR Italian seasoning
  1. Rinse spinach and drain in colander

  2. Set 2-quart soup pot on medium heat and add olive oil and garlic; saute for 1 minute

  3. Add half the spinach and saute until it shrinks down

  4. Add remaining spinach and saute until it shrinks down

  5. Add salt and seasoning; saute for 1 minute

  6. Add broth; increase heat to high until boiling

  7. Reduce heat to low, cover and cook for 15 minutes

  8. Stir in brown rice

  9. Serve

  • For omnivore version, use chicken broth; for vegetarian/vegan version, use vegetable broth
  • You can find pre-cooked brown rice in freezer section of your supermarket or at Trader Joe’s
  • If you like a thicker soup, add more rice
