One of the many ways to use the basic Vanilla Cake is to make a berry shortcake with it. Here is a recipe to transform the basic cake into a great dessert worthy of any special occasion.
Berry-topped Cake
Make the standard Vanilla Cake and top with berries, sauce and whipped cream or ice cream.
- 1 Vanilla Cake (See recipe)
- 2 cups Berries (Strawberries, raspberries, blueberries)
- 2 cups Berries, fresh or frozen (For sauce)
- 1/4 cup confectioners sugar
- 1 cup Heavy Whipping Cream ((optional))
- 1/2 teaspoon Vanilla
- 2 tablespoons confectioners sugar
- Ice cream ((optional))

Make-ahead: Basic Vanilla Cake

If 2 cups of berries for sauce are frozen, set out in a bowl for about 1/2 hour

Put berries in blender with 1/4 cup confectioners sugar and blend until smooth. If too thick, add 1/4 cup of water; refrigerate.

Slice other 2 cups berries; refrigerate

Put whipping cream in mixer bowl with 1/2 teaspoon vanilla and 2 tablespoons confectioners sugar

Beat whipping cream on high till thick; refrigerate.
To Serve

Cut serving-size piece of cake (about 2 inches square). Cut horizontally and open up (butterfly it) and put on plate.

Top cake with desired amount of sauce and some berries.

Add whipped cream or ice cream, as desired. (optional)
