Rehydrated Apricots

Canned apricots are expensive and while fresh ones are ok in season, sometimes they’re not picked when ripe and don’t have much flavor. Dried apricots do have a more intense flavor and are available year-round. Once they’re rehydrated, you can add a couple to hot cereal as a fruit sweetener, eat 3 or 4 for a snack, or make a quick dessert by adding ¼ cup ice cream.

  • 1 cup dried apricots
  1. Put apricots in a medium saucepan and add water to about 1 inch above apricots.

  2. Cover and bring to a boil.

  3. Remove from heat and let cool.

  4. Serve warm or cold.

  5. Store in refrigerator in their liquid; will keep for a couple of weeks.
